I'm fairly content though, because I have recently discovered my new favorite bread from this cute little Japanese Bakery, Ichido. Mmmm, Cranberry Walnut bread. Hope you enjoy the recipe!
Ingredients: serves 2 (each person gets 2 mini sandwiches)
8 slices of 3" x 2" Cranberry Walnut bread
2 oz mozzarella cheese, thinly sliced
scant 1/8 cup of Craisins (or any dried cranberries)
Method:
Slice the bread into slices of 1 cm thickness. Add 0.5 oz of mozzarella to each slice of bread. Layer the slices of cheese with cranberries. Add the other slice of bread. Place the 4 mini sandwiches in a non-stick pan on low-medium heat/fire. Cook for about 5-6 minutes. Flip each sandwich and cook for an additional 4-5 minutes. Voila! A tasty grilled cheese for one of those days.

ReplyDeleteThis ones from a cute little Japanese bakery in a mall nearby, but I've had very very similar bread from other bakeries as well. Look around in your nearby stores :)
